Cheesy Stuffed Pinwheel Steaks
Equipment
- Pellet Grill or Griddle
- Meat mallet
- Cooking Twine
Ingredients
- 4 oz cream cheese (softened)
- 1¼ lbs flank steak
- steak rub (your choice)
- ¼ c sour cream
- 1 tbsp sun dried tomatoes (minced)
- 2 tbsp olive oil
- 6 slices provolone cheese (sliced and chopped)
- 1 c spinach (chopped)
- ¼ tsp fennel (ground)
Instructions
- Preheat your pellet grill (or griddle) on high heat.
- Place 1¼ lbs flank steak on a cutting board and slice horizontally across, to open, without completely cutting through.
- Using a meat mallet pound the steak to even thickness if needed.
- Season steak evenly on both sides with steak rub, set aside.
- In a mixing bowl, use a hand mixer to combine 4 oz cream cheese, ¼ c sour cream, 1 tbsp sun dried tomatoes, and ¼ tsp fennel.
- Spread the cream cheese mixture evenly on steak, then layer spinach and provolone. Roll steak, then tie with kitchen twine every 2 inches. Slice steak in between ties to cut into portions.
- If using a griddle, carefully add oil and heat (skip if using a pellet grill).
- Add steak rolls and sear 5 minutes per side.
- Remove steaks from the grill and let rest for 5 minutes.
Notes
Be warned this meal makes a mess on a pellet grill (or any grill for that matter)! As a cheat...I will use a cast iron skillet while I'm warming the grill and heat the olive oil in that to contain the mess! You'll still get the flavor of the pellet grill, without the drippy mess of the cheese.
