Szechwan Chicken Salad
Ingredients
- 1 large pineapple
- 1 chicken breast
- 1 c mayonnaise
- ½ c green onions (cut diagonally)
- 1 small red pepper (chopped)
- 1 tbsp sesame oil
- ½ c cashews
- 1 tsp salt
- ½ tsp ginger
- ½ tsp crushed red pepper
Instructions
- Cook 1 chicken breast. Place in the refrigerator to chill. Once chilled, cut into bite-sized cubes.
- In a large bowl, combine cubed chicken, ½ c green onions, 1 large pineapple, and 1 small red pepper.
- In a small bowl, whisk together 1 c mayonnaise, ½ tsp crushed red pepper, ½ tsp ginger, and 1 tsp salt. Whisk in 1 tbsp sesame oil.
- Add ½ of the dressing mixture to the chicken; place in the refrigerator to chill, reserving the remainder.
- Once chilled, serve with the remaining dressing and ½ c cashews.
