Chicken in Spicy Peanut Sauce

Equipment

  • Wax Paper

Ingredients
  

  • 6 chicken breasts
  • 2 tbsp olive oil
  • 1 can cream of chicken soup
  • 3 tbsp chunky peanut butter
  • 2 green onions (chopped)
  • 1 tsp chili powder
  • c water
  • tsp cayenne pepper

Instructions
 

  1. Place 6 chicken breasts between wax paper and roll thin.
  2. In a large skillet, heat 2 tbsp olive oil and brown chicken until cooked through. Add olive oil as needed if the pan gets dry.
  3. In a large skillet, add 1 can cream of chicken soup, 3 tbsp chunky peanut butter, 2 green onions, 1 tsp chili powder, ⅔ c water, and ⅛ tsp cayenne pepper. Heat to boil.
  4. Add cooked chicken and heat on low for 5 minutes, stirring occasionally.
