Libby's Great Pumpkin Cookies

Ingredients
  

  • 4 c un-sifted flour
  • 2 c quick or old fashioned oats (uncooked)
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • ½ c butter or margarine (softened)
  • 1 c granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 16 oz Libby's solid pack pumpkin
  • 1 c chocolate chips

Optional

  • 1 c raisins (in place of chocolate chips)

Instructions
 

  1. Preheat oven to 350 degrees
  2. Combine 4 c un-sifted flour, 2 c quick or old fashioned oats, 2 tsp baking soda, 2 tsp ground cinnamon, and 1 tsp salt. Set aside.
  3. Cream ½ c butter or margarine, gradually add 1 c granulated sugar, beating until light and fluffy. Add 1 egg and 1 tsp vanilla. Mix well.
  4. Alternate additions of dry ingredients and 16 oz Libby's solid pack pumpkin, mixing well after each addition.
  5. Stir in 1 c chocolate chips (or optionally 1 c raisins).
  6. For each cookie drop ¼ cup dough onto a lightly greased cookie sheet.
  7. If desired, spread into pumpkin shapes using thin metal spatula, adding a bit more dough to form a stem.
  8. Bake for 20-25 minutes until cookies are firm and lightly browned. Remove from cookie sheets and cool on racks.
  9. Decorate using icing or peanut butter to affix assorted candies, raisins, or nuts.

Notes

Dough may be frozen in an air-tight container.  Thaw in refrigerator and then bake as directed.
