Peanut Butter Balls

Ingredients
  

  • 12 oz Nestle peanut butter chips
  • ¼ c butter
  • 2 c confectioners sugar (sifted)
  • oz flaked coconut
  • c evaporated milk
  • 2 eggs (slightly beaten)
  • 1 tsp vanilla
  • 1 c peanuts (chopped)

Instructions
 

  1. Over hot (<strong>not</strong> boiling) water 12 oz Nestle peanut butter chips, ¼ c butter, and ⅓ c evaporated milk. Stir until smooth.
  2. Stir in 2 eggs. Cook and stir for 2 minutes.
  3. Blend in 2 c confectioners sugar and 1 tsp vanilla. Stir in ¾ c coconut and ½ c peanuts. Transfer to a bowl.
  4. Chill for 2 hours.
  5. Using 1 rounded teaspoonful for each, shape into balls.
  6. Combine remaining coconut and peanuts. Roll ball in mixture to coat. Place on waxed paper lined cookie sheets and chill 1 hour.
