Peanut Butter Balls
Ingredients
- 12 oz Nestle peanut butter chips
- ¼ c butter
- 2 c confectioners sugar (sifted)
- 3½ oz flaked coconut
- ⅓ c evaporated milk
- 2 eggs (slightly beaten)
- 1 tsp vanilla
- 1 c peanuts (chopped)
Instructions
- Over hot (<strong>not</strong> boiling) water 12 oz Nestle peanut butter chips, ¼ c butter, and ⅓ c evaporated milk. Stir until smooth.
- Stir in 2 eggs. Cook and stir for 2 minutes.
- Blend in 2 c confectioners sugar and 1 tsp vanilla. Stir in ¾ c coconut and ½ c peanuts. Transfer to a bowl.
- Chill for 2 hours.
- Using 1 rounded teaspoonful for each, shape into balls.
- Combine remaining coconut and peanuts. Roll ball in mixture to coat. Place on waxed paper lined cookie sheets and chill 1 hour.
