Roasted Pumpkin Seeds
Ingredients
- 1 qt water
- 2 c pumpkin seeds
- 2 tbsp salt
- 1 tbsp vegetable oil or melted, unsalted butter
Instructions
- Preheat oven to 350 °F
- Pick through seeds and remove any cut seeds. Remove as much of the stringy fibers as possible.2 c pumpkin seeds
- Bring salted water to a boil. Add the seeds and boil for 10 minutes.1 qt water, 2 tbsp salt
- Drain, spread on a kitchen towel, and pat dry.
- Place the seeds in a bowl and toss with oil or melted butter. Spread evenly on a large cookie sheet.1 tbsp vegetable oil or melted, unsalted butter
- Roast the seeds for 30 to 40 minutes, stirring about every 10 minutes, until crisp and golden brown. Remove and set aside to cool.
- Shell and eat or pack in air-tight containers and refrigerate until ready to eat.
