Szechwan Chicken Salad

Ingredients
  

  • 1 large pineapple
  • 1 chicken breast
  • 1 c mayonnaise
  • ½ c green onions (cut diagonally)
  • 1 small red pepper (chopped)
  • 1 tbsp sesame oil
  • ½ c cashews
  • 1 tsp salt
  • ½ tsp ginger
  • ½ tsp crushed red pepper

Instructions
 

  1. Cook 1 chicken breast. Place in the refrigerator to chill. Once chilled, cut into bite-sized cubes.
  2. In a large bowl, combine cubed chicken, ½ c green onions, 1 large pineapple, and 1 small red pepper.
  3. In a small bowl, whisk together 1 c mayonnaise, ½ tsp crushed red pepper, ½ tsp ginger, and 1 tsp salt. Whisk in 1 tbsp sesame oil.
  4. Add ½ of the dressing mixture to the chicken; place in the refrigerator to chill, reserving the remainder.
  5. Once chilled, serve with the remaining dressing and ½ c cashews.
