Spinach Souffle

Ingredients
  

  • 1 pkg frozen spinach
  • 1 tbsp onion (grated)
  • 2 eggs (beaten)
  • ½ c sour cream
  • 1 c Parmesan cheese
  • 1 tbsp flour
  • 2 tbsp butter
  • salt and pepper (to taste)

Instructions
 

  1. Preheat oven to 350 °F
  2. Cook 1 pkg frozen spinach with 1 tbsp onion in a small amount of water. Drain.
  3. Add 2 eggs, ½ c sour cream, 1 c Parmesan cheese, 1 tbsp flour, 2 tbsp butter, and salt and pepper to taste.
  4. Pour into greased 1 quart casserole dish and bake for 25-30 minutes until center is set.
  5. If desired, pour cheese sauce over the top prior to serving.
