Paula Trout's 4th of July Romaine and Noodle Salad
Ingredients
Dressing
- 1 c olive oil
- ⅓ c red wine vinegar
- ⅔ c sugar
- 1 tsp salt
- ¼ tsp garlic powder
- ¼ tsp pepper
Salad
- 1 head napa cabbage (thinly sliced)
- 1 head romaine lettuce (thinly sliced)
- 1 red pepper (diced)
- 4 green peppers (diced)
- 2 pkg Chicken Ramen noodles
- ⅓ c sesame seeds
- 3 tbsp margarine (melted)
Optional
- ½ c slivered almonds or pine nuts
Instructions
Salad
- Crumble 2 pkg Chicken Ramen noodles, mix in 3 tbsp margarine, and sauté. Set a packet of seasoning aside.
- Add ⅓ c sesame seeds and ½ c slivered almonds or pine nuts and 1 packet of chicken Ramen seasoning.
- Set aside to cool.
- Toss to combine 1 head napa cabbage, 1 head romaine lettuce, 1 red pepper, and 4 green peppers.
- Add the cooled ramen mixture to the salad and mix.
Dressing
- Combine 1 c olive oil, ⅓ c red wine vinegar, ⅔ c sugar, 1 tsp salt, ¼ tsp garlic powder, and ¼ tsp pepper to make the dressing.
- Pour the dressing over the salad, toss to combine.
