Black Bean Salad

Ingredients
  

  • 1 can black beans (rinsed and drained)
  • 16 oz canned corn (drained)
  • 1 green, yellow, or red pepper (chopped)
  • ½ c red onion (chopped)
  • 1 tsp cilantro (fresh)
  • 1 tsp lime juice
  • sugar (pinch)
  • pepper (to taste)
  • 1 clove garlic (minced)
  • ¼ c olive oil
  • Tortilla chips

Instructions
 

  1. Combine peppers, onion, and corn
    16 oz canned corn, 1 green, yellow, or red pepper, ½ c red onion
  2. Mix olive oil, vinegar, cilantro, garlic, sugar, and lime juice together and then pour over the peppers, onion, and corn.
    1 tsp cilantro, 1 tsp lime juice, sugar, 1 clove garlic, ¼ c olive oil, pepper
  3. Add black beans to the mixture last, serve with tortilla chips.
