Chicken Pie

Ingredients
  

  • 4 c cooked chicken
  • ¼ c butter
  • 5 oz evaporated milk
  • 2 c chicken broth
  • ¼ c flour
  • 1 refrigerated pie crust

Instructions
 

  1. Preheat oven to 400 °F
  2. Cut 4 c cooked chicken into chunks.
  3. In a large skillet, melt ¼ c butter. Whisk in ¼ c flour and cook over medium heat to form a roux.
  4. Add 5 oz evaporated milk and 2 c chicken broth. Cook over medium heat until thickened to a gravy-like consistency.
  5. Add chicken to mixture and pour into a 9x9 or 10x10 baking dish.
  6. Cover with 1 refrigerated pie crust, trimming excess, and bake for 30 minutes or until crust is slightly browned.
