Chicken Salad

Ingredients
  

  • 8 chicken breasts (cooked)
  • ½ c sour cream
  • 1 tbsp lemon juice
  • ½ c mayonnaise or Miracle Whip
  • c white grapes

Optional

  • ½ c sliced almonds (toasted)

Instructions
 

Optional

  1. Toast the almonds at 350 °F in a shallow pan, watching carefully to prevent overcooking, for approximately 5 minutes
    ½ c sliced almonds

Chicken Salad

  1. In a large bowl, cut or shred 8 chicken breasts into generous-sized pieces
    8 chicken breasts
  2. Mix ½ c sour cream, ½ c mayonnaise or Miracle Whip, and 1 tbsp lemon juice together and add to the chicken.
    ½ c sour cream, 1 tbsp lemon juice, ½ c mayonnaise or Miracle Whip
  3. Toss in ¾ c white grapes, more if desired.
    1¼ c white grapes
  4. If serving on plates, garnish with remaining grapes and toasted almonds.

Notes

If garnishing with grapes, you can sugar the grapes (frost) them by dipping damp grapes in granulated sugar.
