Country Rice

Ingredients
  

  • 3 c cooked rice
  • ½ c cheddar cheese (shredded)
  • ½ c parsley (chopped)
  • ½ c onion (chopped)
  • 1 clove garlic
  • ¼ c green pepper (chopped)

Sauce

  • 1 c evaporated milk
  • 2 eggs
  • ½ c oil
  • 1 tbsp salt
  • 3 tbsp lemon juice
  • celery salt and pepper (dash)

Instructions
 

  1. Preheat oven to 350 °F
  2. Combine 3 c cooked rice, ½ c cheddar cheese, ½ c parsley, ½ c onion, 1 clove garlic, and ¼ c green pepper. Mix well.
  3. Mix 1 c evaporated milk, 2 eggs, ½ c oil, 1 tbsp salt, 3 tbsp lemon juice, and celery salt and pepper together. Pour over tossed rice mixture.
  4. Bake 45 minutes.
