Country Rice
Ingredients
- 3 c cooked rice
- ½ c cheddar cheese (shredded)
- ½ c parsley (chopped)
- ½ c onion (chopped)
- 1 clove garlic
- ¼ c green pepper (chopped)
Sauce
- 1 c evaporated milk
- 2 eggs
- ½ c oil
- 1 tbsp salt
- 3 tbsp lemon juice
- celery salt and pepper (dash)
Instructions
- Preheat oven to 350 °F
- Combine 3 c cooked rice, ½ c cheddar cheese, ½ c parsley, ½ c onion, 1 clove garlic, and ¼ c green pepper. Mix well.
- Mix 1 c evaporated milk, 2 eggs, ½ c oil, 1 tbsp salt, 3 tbsp lemon juice, and celery salt and pepper together. Pour over tossed rice mixture.
- Bake 45 minutes.
