Green Rice

Ingredients
  

  • 3 c cooked rice
  • 1 c cheddar cheese (grated)
  • ¼ c green pepper (chopped)
  • 14½ oz evaporated milk
  • ½ c vegetable oil
  • ½ tsp Accent
  • 1 c parsley (chopped)
  • ½ c onion (chopped)
  • 1 clove garlic (minced)
  • 2 eggs (beaten)
  • ½ tsp salt
  • ½ tsp pepper
  • 1 lemon

Instructions
 

  1. Preheat oven to 345 °F
  2. Mix 3 c cooked rice, 1 c parsley, 1 c cheddar cheese, ½ c onion, ¼ c green pepper, and 1 clove garlic in greased 2 quart casserole dish.
  3. Blend 14½ oz evaporated milk, ½ c vegetable oil, ½ tsp Accent, 2 eggs, ½ tsp salt, and ½ tsp pepper. Add juice and zest of 1 lemon.
  4. Bake for 45 minutes or until like custard. Insert knife in the middle, if it is almost completely clean when pulled out the rice is done.
