Green Rice
Ingredients
- 3 c cooked rice
- 1 c cheddar cheese (grated)
- ¼ c green pepper (chopped)
- 14½ oz evaporated milk
- ½ c vegetable oil
- ½ tsp Accent
- 1 c parsley (chopped)
- ½ c onion (chopped)
- 1 clove garlic (minced)
- 2 eggs (beaten)
- ½ tsp salt
- ½ tsp pepper
- 1 lemon
Instructions
- Preheat oven to 345 °F
- Mix 3 c cooked rice, 1 c parsley, 1 c cheddar cheese, ½ c onion, ¼ c green pepper, and 1 clove garlic in greased 2 quart casserole dish.
- Blend 14½ oz evaporated milk, ½ c vegetable oil, ½ tsp Accent, 2 eggs, ½ tsp salt, and ½ tsp pepper. Add juice and zest of 1 lemon.
- Bake for 45 minutes or until like custard. Insert knife in the middle, if it is almost completely clean when pulled out the rice is done.
