Hummingbird Cake
Ingredients
- 3 c all purpose flour
- 1½ c vegetable oil
- 1 c chopped nuts
- 1½ tsp vanilla
- 1 tsp salt
- 8 oz crushed pineapple (drained)
- 1 tsp baking soda
- 2 c bananas (mashed)
- 2 c sugar
- 3 eggs (beaten)
- 1 tsp cinnamon
Icing
- 6 oz cream cheese
- 2 boxes confectioner's sugar
- 1 tbsp milk
- 2 tbsp vanilla
Instructions
- Preheat oven to 350 °F
- Combine 3 c all purpose flour, 2 c sugar, 1 c chopped nuts, 1 tsp baking soda, 1 tsp salt, and 1 tsp cinnamon.
- Add 3 eggs and 1½ c vegetable oil. Don't over beat eggs.
- Stir in 1½ tsp vanilla, 8 oz crushed pineapple, and 2 c bananas.
- Bake in greased and floured layer pans (3 pans) or one big sheet pan for 30-35 minutes.
Icing
- Mix 6 oz cream cheese, 2 boxes confectioner's sugar, 1 tbsp milk, and 2 tbsp vanilla. Add milk if thinner consistency is needed.
- Refrigerate any leftover cake.
