Spinach Souffle
Ingredients
- 1 pkg frozen spinach
- 1 tbsp onion (grated)
- 2 eggs (beaten)
- ½ c sour cream
- 1 c Parmesan cheese
- 1 tbsp flour
- 2 tbsp butter
- salt and pepper (to taste)
Instructions
- Preheat oven to 350 °F
- Cook 1 pkg frozen spinach with 1 tbsp onion in a small amount of water. Drain.
- Add 2 eggs, ½ c sour cream, 1 c Parmesan cheese, 1 tbsp flour, 2 tbsp butter, and salt and pepper to taste.
- Pour into greased 1 quart casserole dish and bake for 25-30 minutes until center is set.
- If desired, pour cheese sauce over the top prior to serving.
