Preheat oven to 350 °F
In a large pan cook 1 fryer or whole chicken, 2 celery stalks, 1 medium onion, salt and pepper until chicken is cooked through.
Remove bones from chicken and cube. Set aside with the celery and onion.
In the same pan cook 1 c broccoli until tender.
In a large baking dish sprayed with cooking oil, layer broccoli and chicken mixture. Top with a generous amount of cheddar cheese (reserve some for later).
8 oz cheddar cheese
In a large bowl, mix together cream of 1 can cream of chicken soup, ½ c mayonnaise, and a small amount of milk (to thin mixture). Add curry powder to taste. Pour over the chicken and broccoli, and top with cheddar cheese.
Bake until heated through and bubbling.
