Place 1 whole chicken in a large pot or dutch oven with 2 oz pickling spice and salt and pepper. Cover and bring to a boil.
Turn down to low and cook 30-40 minutes until done. Lift chicken out with slotted spoon.
Drain broth through colander into another large pan. Pour half of the broth back to the first cooking pot. Add water to the 1st pot for dumplings and bring to a boil.
Drop dumpling mixture in by tablespoons into boil broth, cook uncovered for 10 minutes. Cover and cook 10 more minutes.
⅔ c milk, 2 c bisquick
In the other broth pot, add thickening to make gravy and pour over chicken. Serve dumplings in a separate bowl.
