Grandma Jones' Sweet Pepper Relish

Equipment

  • 1 canning pot
  • Canning jars
  • Lids and rings

Ingredients
  

  • 12 sweet red peppers
  • 12 medium white or yellow onions
  • 2 c sugar
  • 12 sweet green peppers
  • 2 c white vinegar
  • 2 tbsp salt

Optional

  • food coloring

Instructions
 

  1. Clean and cut vegetables.
    12 sweet red peppers, 12 medium white or yellow onions, 12 sweet green peppers
  2. Process vegetables through a grinder with a medium blade or food processor.
  3. Place vegetables in a large pan and cover with boiling water. Let stand for 5 minutes
  4. Drain off water and place vegetables back in a large pot. Add vinegar, sugar, and salt. Bring to a boil and cook for 5 minutes
    2 c sugar, 2 c white vinegar, 2 tbsp salt
  5. If desired, add food coloring.
  6. Ladle into sterilized canning jars and seal.
