Combine 2 c avocado, ¾ c Roma tomato, ½ c onion, 1 tbsp lime zest, ¼ c fresh lime juice, ¼ c fresh cilantro, ½ tsp sea salt, ¼ tsp ground black pepper, 1 tbsp extra virgin olive oil, and 2 tbsp jalapeño pepper in a medium bowl, mix well.
Serve immediately or refrigerate, covered tightly, a few hours for flavor.
